Pasta Feta DelightMakes 6-8 servings2-6oz. bags of Pasta (12 oz. total)
1 cup feta cheese, or more
2/3 cup minced parsley, loosely packed
2/3 cup minced fresh basil, firmly packed, or dried to taste
3 seeded tomatoes, coarsely chopped
1/4 cup fresh or frozen lemon juice
1/4 cup extra virgin olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
For one 6 oz. bag, reduce ingredients by half.
Cook pasta according to directions. Drain and rinse with cold water. Add remaining ingredients. Serve room temperature or chilled.
